Kyngs Pear & Tarragon French 75
A sophisticated combination of sweet pear and fresh tarragon.
Ingredients
35ml Kyngs London Dry Gin
20ml pear & tarragon syrup (6 pears, 300g caster sugar, 150ml lemon juice or citric acid)
20ml lemon juice
Champagne
Method
Make the syrup by dissolving sugar in lemon juice, adding fruit and leaving to macerate for 4-6 hours. Shake all ingredients except champagne together in cocktail shaker and top with champagne.
Recommended Garnish
Fresh pear or sprigs of tarragon.
