This gin was launched in 2019 and began after three friends were searching for ideas for an Alice in Wonderland themed event. It started with a bespoke gin fountain and saw the founding members team up with a distiller to use their signature Pink Marmalade recipe in their gin.
Each gin is handcrafted using a traditional single-shot method of distillation, using small, age-old copper vessels. The spirit patiently distils for 12 hours, to which the salted Pink Grapefruit Marmalade is added, which intensifies the gin’s zesty flavour. This is added to the 12 botanicals, which include Kaffier Lime Leaf, Coriander Seeds, Pink Peppercorns, and Butterfly Pea Flower which turns the gin a cool cobalt blue and gives it natural colour changing qualities.
The result, a dry, zesty and premium gin, with citrus and fresh elements that are closed off with the subtle complexity from the kaffier lime leaf, pink peppercorns and salted marmalade.
For the perfect serve, enjoy watching the colour changing after adding tonic, and garnish with a slice of dehydrated pink grapefruit and rosemary.
