The Bombay Sour is a spiced version of the classic Sour, combining a spirit, citrus juice and the essential ingredient – egg white.
Pickering’s used this as their signature drink for their appearance at the Royal Edinburgh Military Tattoo.
Ingredients
50ml Pickering’s Gin
25ml Lemon Juice
25ml Apple Syrup
½ tsp Tamarind Paste
5 – 10ml Egg White
Method
Add all ingredients to a cocktail shaker with ice. Shake vigorously before straining into a glass.

A lemon wedge.
